Overview

Crispy-skinned chicken with lemon and herbs — simple and dependable.

Ingredients

  • 8 piece Chicken thighs
  • 2 tbsp Olive oil (divided)
  • 1 piece Lemon (zest and juice)
  • 3 clove Garlic (minced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper (to taste)
  • 2 tbsp Fresh herbs (thyme/rosemary) (roughly chopped)

Instructions

Season chicken. Roast skin-side up until crisp. Finish with lemon juice and rest briefly before serving.
