Roasted Lemon Chicken Thighs

Overview
Crispy-skinned chicken with lemon and herbs — simple and dependable.
Ingredients
- 8 piece Chicken thighs
- 2 tbsp Olive oil (divided)
- 1 piece Lemon (zest and juice)
- 3 clove Garlic (minced)
- 1 tsp Salt
- 0.5 tsp Black pepper (to taste)
- 2 tbsp Fresh herbs (thyme/rosemary) (roughly chopped)
Tools
- Cutting board — Prep

- Baking sheet — Oven, Rimmed, heavy-duty, Rimmed, heavy-duty
- Tongs — Utensils
Instructions
Season chicken. Roast skin-side up until crisp. Finish with lemon juice and rest briefly before serving.
